The best semifreddo recipe is Angela Hartnett’s chocolate and vanilla semifreddo, passed down through her family as featured in The Observer’s Top 50 favourite recipes.

A lovely semifreddo is enhanced when served with a silky chocolate ganache. To make, bring 1 cup of cream slowly to the boil before turning off the hear. Stir in 340g chocolate callets until you have a thick and glossy chocolate mixture. Drizzle on your semifreddo while still warm.
