The Country Women’s Association of Australia (CWA) judge lamingtons on their flavour, size, and texture.
Store in an airtight container at room temperature for up to three days.

It’a Australia Day holiday here and I couldn’t think of many really Oz things to make that are easy and yummy. Ok, Pav I probably up there, but if you are making it from scratch, it can prove tricky (or am I the only one?). Lamingtons are great to make with kids. I admit, hideously messy with kids, but very very fun.
